Ingredients & Prep
1000 g
Pork belly skinless cut into 2cm strips then in half
Cooking stock
to cover
Water
2 Chicken stock cube or gel pots
2 tbsp
Fresh ginger chopped
4 Garlic cloves chopped
4 Star anise
2 tbsp
Rice wine or dark Sherry
2 tbsp
Brown sugar
Glaze
4 tbsp
Dark soy sauce
2 tbsp
Honey runny
2 tbsp
Brown sugar
1 tbsp
Fresh ginger finely grated
2 Garlic cloves finely grated
1 Red chilli large finely chopped
1/2 tsp
Chinese five spice powder
1/2 tsp
Black pepper ground
Method
Step 1
Place pork & cooking stock ingredients into a lidded saucepan & place on a low heat , cook for 2 hours until tender.
Step 2
Remove pork strips with a slotted spoon while hot & set aside to cool & dry, then cut into bite sized pieces.
Step 3
In a bowl add soy sauce, honey, brown sugar, five spice & pepper mix well & set aside
Step 4
Heat a wok or frying pan on a med heat, add oil & pork pieces stir & fry until a little colour, then add ginger, garlic & red chilli, cook & stir for 1 min, then add soy mixture, stir & cook to reduce until the sauce is sticky, then its done.
Suggestion & Tips
Serve with rice & Chinese stir fried vegetables. If too dry add a little of the cooking stock, you can re-use the stock for soup base or to blanch veg in prior to stir frying.
