Ingredients & Prep
1 Cauliflower large remove florets cut stalks/leaves

Creamed leeks

Leeks trimmed washed & thinly sliced

1/2 veg stock cube or gel pot
Method
Step 1
Pre heat the oven to 180°C, gas mark 6, in a bowl place melted butter, thyme, salt & pepper, mix together, then add cauliflower florets, stalks chopped & leaves & coat, tip cauliflower into a baking dish/tin, cover with tin foil & bake in the oven for 20 mins, remove foil, set aside.
Step 2
For the crumble topping, blitz the bread & dried thyme in a food processor to a crumb, tip in a bowl & mix in the melted butter pepper & grated Parmesan, sprinkle crumble over the top of the baked cauliflower, re-bake in the oven uncovered for 20 to 25 mins or until golden brown.
Step 3
Make the cheese sauce, put butter in a saucepan & melt, add flour & mix in & cook until it bubbles, add milk slowly whisking all the time, when all the milk had been added & smooth, add cream, cheese, pepper & nutmeg if used, whisk until smooth & continue to cook until it bubbles for 1 min.
Step 4
Creamed leeks, melt butter in a pan, add leeks & cook until soft, add cream, stock cube & reduce by half, add mustard & lemon zest & season with salt & pepper.
Step 5
Place cauliflower on a warm serving platter, serve sauce & leeks in separate bowl to share.
Suggestion & Tips
You could add some ground cumin in on the first bake, use different types of cheese. You could use broccoli.
