Step 1
I you wish to make your own spice mix rather than a shop one, here's a recipe for you, this maybe more than you need so store left over spice mix in a sealed container for next time.
Step 2
2 tsp salt
2 tsp garlic powder or granules
1 tbsp paprika
1 tsp ground black pepper
1 tsp onion powder
1 tsp cayenne pepper
1 1/2 tsp dried oregano
1 1/2 tsp dried thyme
1/2 tsp red chilli flakes or powder (optional)

Step 3
Pre heat oven to 180'c.
Step 4
Cut sweet potatoes into wedges, place in a bowl & add oil, rosemary & salt, mix & coat wedges, place on a baking sheet spread out & cook in the oven for 25 to 30 mins.
Step 5
Heat a frying pan on a med heat then rub a little olive oil on the fish & sprinkle over Cajun spice mix, add oil to the pan & fry salmon fillets 2 min on each 4 sides, less or more depending on how well done to you taste.
