Ingredients & Prep

   2000 g  Beef short ribs
   to cover  Water
   400 ml  Coconut milk
   2 Carrots grated
   2 tbsp  Peanut butter smooth
   1 tbsp  Light brown sugar
   1 Beef stock cube or gel pot
   3 tbsp  Groundnut or veg oil
  Curry Paste
   60 g  Fresh coriander chopped
   30 g  Fresh mint chopped
   6 Garlic cloves chopped
   40 g  Fresh ginger chopped
   2 Hot red chillies chopped
   2 Limes zest & juice
   1 tbsp  Rice wine vinegar
   1 tbsp  Thai fish sauce
   1 tsp  Fresh ground black pepper
   sprinkle  Fresh coriander chopped


  Step 1
Place all the curry paste ingredients into a food processor & blitz to a paste, set aside.
  Step 2
Heat a large lidded cooking pot over a med heat, add oil & brown the ribs in batches then set aside, add curry paste stir & cook for 2 mins, add ribs back in the pot, then add water to cover, stock cube, coconut milk, carrot, peanut butter & sugar, bring to a simmer gently stirring all together, then turn down the heat as low as you can, place a lid on & cook for 2 hours until tender, stir occasionally to stop it catching.
