Ingredients & Prep

   800 g  Cod de-skinned cut into chunks
   400 g  Cherry tomatoes halved
   60 ml  Dry white wine
   2 tbsp  Capers drained
   2 tbsp  Lemon juice
   1 Onion med sliced
   1 Fennel bulb thinly sliced
   1 Red chilli mild chopper finely
   1 tsp  Sea salt
   1/2 tsp  Black pepper freshly ground
   2 tbsp  Extra virgin olive oil
   sprinkle  Fresh parsley chopped
   sprinkle  Fresh dill tops chopped


  Step 1
Pre heat oven to 200'c.
  Step 2
Place cod chunks in a bowl with lemon juice, salt & pepper, set aside.
  Step 3
Heat a frying pan on a med heat, add olive oil & fry onions, fennel & chilli until soft, about 10 mins, add wine, tomatoes & capers & cook for a min or 2 until the tomatoes begin to soften.
  Step 4
Place cod chunks in a ovenproof dish which has been lightly coated in olive oil, the tip over onion fennel mixture even out & bake for 8 to 12 mins until the cod flakes.
  Step 5
Sprinkle over garnish & serve hot

Suggestion & Tips

Serve with a nice salad &/or fried potatoes. You can use other fish if you prefer.
