Ingredients & Prep

   4 aubergine med sliced lengthways 1 cm thick
   2 tbsp  groundnut or veg oil
   1/2 tsp  salt
   1/2 tsp  freshly ground black pepper
   1 garlic clove finely grated
   4 tbsp  soy sauce
   2 tbsp  lime juice
   1 tbsp  black treacle
   1 tbsp  rice wine vinegar
   2 tsp  fresh ginger finely grated
   1 garlic cloves finely grated
   4 spring onion thinly sliced on the diagonal
   1 red chilli large mild sliced thinly
   sprinkle  fresh coriander chopped


  Step 1
Mix the dressing ingredients in a bowl & set aside.
  Step 2
Mix oil, garlic, salt & pepper in a bowl, then brush each side of the aubergine, then cook on the barbecue until soft & browned on both sides.
  Step 3
Transfer cooked aubergine to a serving platter & dress with the dressing on both sides.
  Step 4
Sprinkle over garnish & serve.

Suggestion & Tips

Nice with rice & a Asian salad. Cut off a 5 mm slice off each side of the aubergine first & discard as its all skin one side.
