Ingredients & Prep
1000 g
Pears peeled, cored & quartered
500 g
Caster sugar
500 ml
Cider vinegar
6 Cloves
4 Star anise
1 Orange peel & Juice
1 tbsp
Fresh ginger chopped
1 tsp
Black peppercorns
1 Cinnamon stick
Method
Step 1
Peel rind off an orange using a potato peeler then squeeze out juice, place both in a saucepan with vinegar, sugar, cloves, peppercorns, ginger, star anise & cinnamon stick, place pan over a med heat stir & bring to a simmer, then add pears & slow simmer for 12 minutes or until just soft.
Step 2
Have some clean sterilised kilner or standard jars at the ready, when pears are done remove with a slotted spoon, place pears to the jars loosely packed in.
Step 3
Turn up the heat & boil liquid for about 12 minutes or until a little thicker in consistency, then pour hot liquid into jars to cover pears & place lid on & allow to cool.
Suggestion & Tips
Keep in the fridge, should last for 2 months.
