Ingredients & Prep

   900 g  Fresh Pineapple peeled cored & chopped
   200 g  Sugar granulated
   1 lemon zested & juiced

Method

  Step 1
Place all the ingredients into a good sized saucepan or maslin pan, bring to the boil stirring now & then for 1 hour.
  Step 2
Next, use a stick/hand blender & blitz to your consistency of bits.
  Step 3
Pour into sterile jars & lids while still hot, for extra protection & shelf life, place filled jars into boiling water for 10 minutes, turn off heat & allow to cool in the water.

Suggestion & Tips

Once opened keep in the fridge.
