Ingredients & Prep

   3 Peaches peeled, Stoned & quartered
   500 ml  Cider vinegar
   380 g  Caster sugar
   4 Cloves
   1 Cinnamon stick broken in half
   1 Bay leaf
   1 tsp  Yellow mustard seeds
   1 tsp  Pink or White peppercorns

Method

  Step 1
Place vinegar, sugar & all the spices in a saucepan, place over a med heat stir & bring to a simmer, then add peach quarters & cook for 5 minutes, then scoop out peaches with a slotted spoon into a sterile jar.
  Step 2
Turn up the heat to boil & reduce liquid by about a 1/3rd, then pour over peaches in the jar/s to cover, place lid on & allow to cool.
  Step 3
Place jar/s in the fridge, they can be eaten the next day, should last for 2 weeks.

Suggestion & Tips

Very nice with soft cheese.
