Ingredients & Prep
1 Cucumber large thinly sliced
2 Spring onion finely sliced
60 ml
Rice wine vinegar
2 tbsp
Dark soy sauce
1 tbsp
Roasted sesame seeds
2 tsp
Caster sugar
1 tsp
Sesame oil
1/2 tsp
Chilli paste
Method
Step 1
Place vinegar & sugar in a bowl then whisk until sugar has dissolved, then whisk in soy sauce, chilli paste & sesame oil.
Step 2
Next add sliced cucumber & spring onion & mix to coat, then leave at room temperature for 15 to 20 minutes to marinate, sprinkle over sesame seeds & serve.
Suggestion & Tips
Will last in the fridge for 2 days.
