Ingredients & Prep

   6 Lemons juiced
   4 Lemons quartered
   250 g  Fine sea salt
   10 Star anise pod
   1 Cinnamon stick broken in half
   2 Cloves
   2 tsp  Coriander seed
   1 Bay leaf

Method

  Step 1
In a sterile kilner or other jar, place lemon quarters with all the spices then salt, then pour in lemon juice to cover the lemons.
  Step 2
Place the lid on & leave in a dark cupboard for 1 month, rinse under tap when using, once opened keep in the fridge for up to 6 months.

Suggestion & Tips

Very good when used as an ingredient in a tagine.
