Ingredients & Prep

   1000 g  Green tomatoes chopped
   380 tbsp  Cider vinegar
   260 g  Caster sugar
   2 Large onion chopped
   2 Green bell/sweet pepper chopped
   1 g  Garlic clove chopped
   2 Celery sticks chopped
   1 1/2 tsp  Mustard seeds
   1 1/2 tsp  Salt
   1 tsp  Freshly ground black pepper

Method

  Step 1
Blitz the tomatoes, sweet peppers, garlic, onions & celery in a food processor to a paste, you will need to do in batches, then tip pastes into a saucepan.
  Step 2
Place pan on a high heat & add the rest of the ingredients, when boiling reduce heat to a boil, stir the relish & cook for about 40 minutes to reduce liquid to a thick sauce.
  Step 3
When thick ladle into sterile jars & lids, to keep for a longer time place fill jars into a pan of simmering water for 15 minutes to full sterilise.

Suggestion & Tips

Very nice in a hot dog or with cheese. You can use red tomatoes if you wish.
