Ingredients & Prep

   250 g  Dandelion flower heads
   200 g  Sugar
   1 Orange whole chopped
   1 Lemon whole chopped
   to cover  Water

Method

  Step 1
Pick or cut off with scissors all the petals off the centre & put into a lidded saucepan.
  Step 2
Add chopped orange & lemon to the pan then cover with water, place over a low heat a simmer for 1 hour covered, turn off the heat & allow to go cold.
  Step 3
Pour liquid into a jelly bag over a saucepan & allow to drain over night, you should have about 100 to 130ml of liquid ish, add sugar then place over a med heat & simmer up to 104°C (jam temp) use either a jam or electronic thermometer.
  Step 4
When done you should have about 250g of jelly, pour into a sterile jar, when cool keep in the fridge.

Suggestion & Tips

Popular French jam/jelly in French Dandelions are called Piss in Beds. Very nice on toasted French bread or croissant.
