Ingredients & Prep
1000 ml
Tonic or soda water
400 ml
Water tap
400 g
Fresh Rhubarb chopped
120 g
Fresh ginger peeled & chopped
100 g
Caster sugar
1 Lemon chopped
Method
Step 1
Place tap water, sugar & rhubarb into a saucepan over a med heat & cook until soft, then set aside to chill in the fridge.
Step 2
Place all ingredients into a food processor or liquidiser & blitz smooth.
Step 3
Place a fine sieve lined with a sheet of muslin cloth over a bowl, tip pulp into the sieve & push out juice with the back of a spoon or ladle to extract as much of the juice concentrate as you can, then twist muslin cloth to squeeze the last drop of the juice.
Step 4
Pour juice concentrate into a jug with the tonic water & some ice & serve.
Suggestion & Tips
You can store the concentrate in the fridge for 5 days.
