Ingredients & Prep
150 g
fresh raspberries
60 ml
water
50 g
caster sugar
1 tbsp
lemon juice
1 tsp
vanilla extract
1000 ml
soda water
Method
Step 1
Add water (not soda) & sugar in a saucepan, heat to a boil stirring to dissolve the sugar, then add raspberries & cook for 5 mins until soft, squish the berries with a wooden spoon to break up.
Step 2
Place a fine sieve over a bowl, tip in berry mixture & strain, push pulp with the back of the spoon to squeeze out the last of the juice.
Step 3
Mix in vanilla & add lemon juice & mix in, pour into a serving jug & place in the fridge to chill for 2 hours.
Step 4
Dilute to taste in a glass with chilled soda water & ice.
Suggestion & Tips
Very refreshing on hot day. You could try other soft fruits.
