Ingredients & Prep

   1000 ml  soda water
   300 ml  water
   200 g  fresh blueberries
   2 tbsp  fresh ginger grated
   75 g  caster sugar
   2 tbsp  lime juice
   2 tbsp  lemon juice
  Garnish
   24 fresh blueberries
   12 fresh mint leaves
   to taste  ice cubes

Method

  Step 1
Place the water, sugar, ginger & the blueberries in a saucepan, bring to the boil on a high heat, then turn down to a low simmer for 15 mins, turn off heat & crush with a potato masher, leave to cool for 20 mins then place a sieve above a bowl, strain liquid, push remaining syrup liquid out of the pulp with the back of a spoon.
  Step 2
Place liquid in a large jug, then place in the fridge to chill, when chilled add lemon, lime juice & chilled soda water, mix.
  Step 3
Place ice in glasses pour in cooler & garnish.

Suggestion & Tips

You can make the syrup in advance.
