Ingredients & Prep

   6 lemons unwaxed
   1000 ml  sparkling or tonic water
   125 g  caster sugar
   300 ml  water luke warm

Method

  Step 1
Use a lemon squeezer to squeeze out the juice form the lemons, you should get 2 tbsp (30ml) from each discarding the pips & pour in a serving jug then put jug in the fridge.
  Step 2
Place sugar, luke warm water & 1/4 of the lemon peel/shells (1/4 of a lemon shell per serving), then blitz in a food processor or liquidiser to a smooth pulp, strain the pulp in a bowl & a fine sieve, then pour this into the jug of lemon juice the put back in the fridge to chill.
  Step 3
Dilute to taste in the serving glass with chilled sparkling/tonic water & ice.

Suggestion & Tips

Blitzing the peel will extract the lemon oil which is that gives real lemon flavour.
