Ingredients & Prep

   1000 g  Tonic or soda water
   300 tbsp  Water tap
   200 g  Fresh ginger peeled & chopped
   120 g  Golden caster sugar
   1 Lemon chopped


  Step 1
Place ginger, tap water, sugar & chopped lemon in a food processor or liquidiser & blitz to a fine pulp.
  Step 2
Place a fine sieve over a bowl, tip pulp into the sieve & push out juice with the back of a spoon or ladle to extract as much of the juice concentrate as you can.
  Step 3
Pour juice concentrate into a jug with the tonic water & some ice & serve.

Suggestion & Tips

You can store the concentrate in the fridge for 5 days.
