Ingredients & Prep

   1650 ml  water
   3 tbsp  lemon juice
   1/8 tsp  fresh dry yeast
   1 empty clean fizzy drink bottle 2l
  Pre Syrup
   200 g  granulated sugar
   100 ml  water
   4 tbsp  fresh ginger coarsely grated

Method

  Step 1
First make the syrup by adding all ingredients into a saucepan, place on a med heat stir & bring to the boil, then turn off the heat & set aside for at least 2 hours covered to infuse.
  Step 2
In a large bowl add the yeast & about 200ml of the water, mix the yeast in, best to leave for 10 mins to allow the yeast to soften, next is to add the cool syrup through a fine sieve to remove the bits.
  Step 3
Top up with the rest of the water & the lemon juice mix altogether.
  Step 4
IMPORTANT DO NOT FILL TO THE TOP OF THE BOTTLE, use a funnel to fill about 4 cm from the bottom of the screw top.
  Step 5
Leave bottles in a cool dark place, after 2 days loosen the cap to release some pressure, leave for another day then place in the fridge to reduce the fermentation, now ready to drink, drink with in 2 weeks.

Suggestion & Tips

Best left in a cool garage while fermenting in case of the bottle popping. In hot weather open the bottles every day to let pressure out.
