Ingredients & Prep

   20 g  loose black tea
   1/2 cinnamon stick crumbled
   1 tsp  fennel seeds
   1/2 tsp  black peppercorns
   1 star anise
   3 cardamom pods
   2 whole cloves
   to taste  UHT or condensed milk

Method

  Step 1
Place cinnamon, fennel seeds, black peppercorns, star anise, cardamom & cloves in a dry frying pan, roast on a med heat until spices start to smoke & smell fragrant, tip out on the pan to stop cooking, place in a spice grinder of food processor/blender to a course powder. Mix spice mix with the tea.
  Step 2
Use 1 heaped tsp per cup in a jug pour over boiling water, let it brew, add either UHT or condensed milk if you like it sweet, pour into the cup using a fine strainer to sieve out spice bits.

Suggestion & Tips

You can add dried chilli flakes if you like it spicy hot.
