Ingredients & Prep
1600 g cantaloupe melon peeled flesh
360 ml sparkling or soda water
1 tbsp fresh lemon or lime juice
8 fresh mint leaves whole
Place melon flesh in a liquidiser or food processor & blitz to a pulp, strain pulp into a bowl with a fine sieve, the pour into a serving jug.
Add water, mint leaves & juice stir in then place in the fridge to chill for at least 2 hours to allow the mint to infuse.
Pour into glasses with some ice.
Suggestion & Tips
Very refreshing on hot day. You could try other soft fruits.
