Ingredients & Prep

   700 ml  Tonic or soda water
   400 ml  Water
   400 g  Fresh Blackcurrants
   1 Lemon chopped
   1 Lemon juiced
   60 g  Icing sugar


  Step 1
Place fruit, tap water, sugar, lemon juice & chopped lemon in a food processor or liquidiser & blitz to a fine pulp.
  Step 2
Place a fine sieve over a bowl, tip fruit pulp into the sieve & push out juice with the back of a spoon or ladle to extract as much of the juice concentrate as you can.
  Step 3
Pour juice concentrate into a jug with the tonic water & some ice & serve.

Suggestion & Tips

If you have a juicer use that with the lemon & fruit to extract the juice concentrate. You can store the concentrate in the fridge for 5 days.
