Ingredients & Prep

Seafood sticks minced

2 Kaffia lime leaf very finely chopped

Flour seasoned with Salt & White Pepper

Dipping Sauce
2 tbsp
Rice wine vinegar
2 tbsp
Thai Fish sauce
2 tbsp
Kcap Manis sweet soy sauce
2 tbsp
Thai sweet chilli sauce
1 tbsp
Fresh coriander finely chopped
1 Hot red chilli minced
1 Garlic clove finely grated
Method
Step 1
First place all the dipping sauce ingredients in a bowl to infuse.
Step 2
Pre- heat deep fat fryer to 170'c or use a deep sided saucepan & use a thermometer to 170'c.
Step 3
Place seafood sticks in a food processor & blitz to a course paste, tip paste into a bowl & add pork mince, Kaffia leaf, fish sauce & with pepper & mix well, then make into patties 2cm thick & about 65g in weight.
Step 4
Next dust each Pattie in the flour then the egg, then in the sesame seeds all over including the edges & set aside until all are done.
Step 5
Carefully lower patties into the oil in batches for 6 to 8 mins or until sesame seed coat is light golden brown, remove with a slotted spoon on to kitchen paper, you ken keep batches warm in a low oven until all are done.
Suggestion & Tips
You can use other dips like mayo mixed with either Thai sweet chilli sauce or Siracha sauce or just Thai sweet chilli sauce.
