Ingredients & Prep

   8 Scallops in there shells
   60 g  Shallot finely sliced
   60 g  Butter, softened
   60 g  Breadcrumbs
   30 g  fresh Flat-leaf parsley finely chopped
   1/2 tsp  salt
   1/2 tsp  Black pepper


  Step 1
Clean by removing all the meat etc, replace mussel meat (coral optional, orange bit) in cupped side of the shell.
  Step 2
Heat oven to 200c.
  Step 3
Make gratin mix, the breadcrumbs, parsley, butter, salt & pepper in a bowl.
  Step 4
Spoon on gratin equally on top of each scallop, cook in oven for 8 mins, serve on platter with cocktail of satay sticks.

Suggestion & Tips

You can use either queen or king scallops, queen is best for canapes. You could add a small amount of Garlic if you like.
