Ingredients & Prep
120 g
Button chestnut mushrooms thinly sliced
6 Eggs med
100 g
Gruyere cheese grated
4 Spring onions finely chopped
2 Garlic clove finely chopped
2 tbsp
Double cream
25 g
Butter unsalted
1/2 tsp
Salt
1/2 tsp
Freshly ground black pepper
12 Cup/fairy cake cases greased with butter
Method
Step 1
Pre-heat oven to 170'c fan.
Step 2
Place butter, garlic, mushroom & spring onion in a saucepan on a med heat & cook the mushrooms until soft, about 5 mins, add peas & set aside.
Step 3
In a bowl add the eggs, cream, salt & pepper then whisk altogether then pour into a jug.
Step 4
Either place cup cake case on a flat baking tray or use a non-stick mini tin greased with butter, dollop mushroom pea mixture using a spoon equally in each case, then pour egg mixture equally over the top in each one.
Step 5
Sprinkle cheese equally on top of each one then place in the oven for 15 to 20 mins or until firm in the middle.
Step 6
When cooked allow to cool to warm, peel of paper mold, place on a warm serving platter & eat still warm.
Suggestion & Tips
You can add some fresh herbs or use cheddar or any hard meltable cheese .
