Ingredients & Prep
260 ml
Milk, warmed slightly
2 Egg med white only
100 g
Brown flour
2 Egg beaten whole
5 g
Dried yeast
1/2 tsp

Butter melted & oil 50/50 mix for frying
Topping
50 g
Cream cheese
1 tbsp
Fresh dill chopped
Garnish

Smoked salmon

Salmon or lumpfish caviar

Method
Step 1
Batter add flour, salt & sugar in a bowl & mix well, add yeast mix well, add egg & milk, mix until smooth.
Step 2
Cover bowl with cling film or damp tea cloth in a warm place until doubled is size (about an hour).
Step 3
Take another very clean bowl, Whisk egg white to a meringue, carefully fold meringue into the batter in.
Step 4
Mix melted butter & with the oil, in a bowl, heat a frying pan on a med heat, add oil/butter to fry in, using a tbsp pour batter mixture onto pan leaving enough room to spread with back of spoon, fry each one on both sides for 2-3 mins or until golden, remove & repeat until all mixture has gone, let them cool.
Step 5
Mix melted butter & with the oil, in a bowl, heat a frying pan on a med heat, add oil/butter to fry in, using a tbsp pour batter mixture onto pan leaving enough room to spread with back of spoon, fry each one on both sides for 2-3 mins or until golden, remove & repeat until all mixture has gone, let them cool.
Step 6
Place on a serving dish, spoon over topping on each, fold over a piece of smoked salmon & a blob of caviar with a tsp.
Suggestion & Tips
You could swap the Dill with chopped Chives if you wish.
