Ingredients & Prep

   240 g  Raw prawns
   3 White bread slices
   60 g  Sesame seeds
   1 Egg white only
   1 Garlic clove finely grated
   1 tsp  Fresh ginger finely grated
   2 Spring onion white part chopped
   1 tsp  Soy sauce
   1/4 tsp  Ground white pepper
   250 ml  Groundnut oil
  Dip
   to taste  Thai sweet chilli sauce to dip

Method

  Step 1
Place prawns, egg white, soy sauce & spring onion into a food processor & blitz to a paste, then tip into a bowl & add garlic, ginger & white pepper, mix well.
  Step 2
Place a frying pan on a med heat & add the oil.
  Step 3
Spread the prawn mixture evenly over the bread slices until all has been used up, then sprinkle over sesame seed about 20g per slice evenly & press seeds down lightly.
  Step 4
Next place 1 or 2 of the slices seed side up & cook for 1 to 2 minutes or until light golden brown napping the top a couple of times, when done carefully turn slices over & cook seed side for another 1 or 2 until the seeds have coloured slightly.
  Step 5
When cooked remove with an egg slice & place on kitchen paper to drain.
  Step 6
When all done cut slices in half widthways then cut each half into 3rds to make soldiers, place on a warm serving plate with the dip in a bowl/s.

Suggestion & Tips

You can use other dips like mayo mixed with either Thai sweet chilli sauce or Siracha sauce or just Thai sweet chilli sauce.
