Ingredients & Prep
2 Eggs, med beaten
60 g
Gruyere or cheddar, coarsely grated
40 g
Flour self rising
40 ml
Whole milk
40 ml
Water
40 g
Butter unsalted, cut into pieces
1/2 tsp

Method
Step 1
Add milk, water & butter to a pan, bring to a boil on a med heat, turn heat to low add flour & mix vigorously for a 2 mins. Turn on oven to 190'c
Step 2
Pour mixture into a bowl either a food mixer with a paddle or use an electric h& mixer, allow to cool to warm, mix in cheese & beaten egg gradually until all combined into a smooth mixture.
Step 3
Using a tbsp or a piping bag place dough onto a lined baking sheet (silicon mats) to small mounds about a tbsp quantity, give 5 cm gap between each one to allow for expansion.
Step 4
Bake in the over at 190'c for 12 mins or until golden brown.
Suggestion & Tips
Serve warm not too hot. Maybe serve with a chive & sour cream dip?
