Ingredients & Prep
1 French baguette cut into 20 thin slices
5 Emmental cheese slices each cut into 4 pieces
5 Fresh Ripe Figs sliced widthways
Onion Jam
500 g
Red onions halved & thinly sliced
125 ml
Port or red wine
30 g
Light brown sugar
2 tsp
Fresh Thyme leaves only
1 tbsp
Balsamic vinegar
1/4 tsp
Salt
1/4 tsp
Freshly ground black pepper
1 tbsp
Olive oil
Garnish

Method
Step 1
Make the onion jam by adding oil & sliced onions is a saucepan, heat on a med & cook onions until soft, about 8 mins.
Step 2
Next add wine/port, vinegar, salt, thyme & sugar, bring to the boil then reduce heat to a slow simmer & cook stirring often until the liquid has reduced & jam becomes sticky, add pepper stir in then set aside to cool.
Step 3
Toast baguette slices under the grill on both sides until light brown & set aside.
Step 4
Cut each fig into 4 slices widthways then cut each disc from the centre to the edge, set aside.
Step 5
Place a slice of cheese on each baguette slice, then a spoonful of the chilli jam on top, then twist fig slice 180° & place on top, then sprinkle over thyme leaves to garnish.
Suggestion & Tips
Edam or goats cheese will work well.
