Ingredients & Prep
450 g
Beef mince
2 Egg large beaten
60 g
Fresh breadcrumbs
1 Banana Shallot finely chopped
30 g
Fresh parsley chopped
1/2 Beef stock cube
1/2 tsp
Freshly ground black pepper
16 Cocktail sticks
Glaze
250 g
Cranberry Sauce
150 g
Barbecue sauce, shop brought is fine
120 g
Thai sweet chill sauce
2 tbsp
Cider vinegar
2 tbsp
Worcestershire sauce
1 tsp
Red chilli flakes
1/2 tsp
Salt
Garnish
sprinkle
Fresh parsley chopped
Method
Step 1
Pre-heat oven to 180°C.
Step 2
In a bowl mix ground meat, shallot, breadcrumbs, egg, crumbled stock cube, parsley & black pepper well then form into small balls the size of a small walnut.
Step 3
When all done place on a baking tray & bake for 15 mins.
Step 4
In the meantime place all the glaze ingredients into either a wok or frying pan, cook on a med heat until it bubbles for 2 mins, then add meatballs into the pan baste with the sauce often & cook for another 2 mins.
Step 5
Place meatballs on a serving platter, push in a cocktail stick in each one to hold & sprinkle with parsley.
Suggestion & Tips
You can use Chicken or Pork mince if you prefer.
