Ingredients & Prep
1 Baguette cut into 16 5mm thick angled slices
450 g
Ricotta cheese
300 g
Fresh strawberries cut into small chunks
80 ml
Balsamic vinegar
2 tbsp
Fresh Basil chopped
2 tsp
Icing sugar
1 tsp
Freshly ground black pepper
1/4 tsp
Salt
sprinkle
Olive oil
Method
Step 1
First place the strawberries, balsamic vinegar, icing sugar, salt, pepper & basil in a bowl, carefully fold altogether, then cover & set aside.
Step 2
Pre-heat grill or griddle pan, then sprinkle oil on both sides of the bread slices, then toast both sides of the bread until brown then set a side.
Step 3
Spread a layer of ricotta cheese on one side of the toasts, then spoon over strawberry mixture on top.
Step 4
Place Bruschetta's on a serving platter at room temperature.
Suggestion & Tips
Very good with a glass of sparkling wine.
