Ingredients & Prep

   800 g  Veg mix of choice cut into bite size pieces
   deep fat fry  Vegetable oil
  Batter
   200 ml  Sparkling water ice cold
   85 g  Plain flour
   1 tsp  Chilli flakes
   1/2 tsp  Salt
   1/2 tsp  Caster sugar
  Ponzu Dip
   2 Anchovy fillet in oil crushed to a paste
   4 tbsp  Mirin
   2 tbsp  Yuzu or Grapefruit juice
   2 tbsp  Soy sauce dark
   1 tbsp  Lime juice
   1 Spring onion chopped fine

Method

  Step 1
Pre- heat deep fat fryer to 170'c or use a deep sided saucepan & use a thermometer to 170'c.
  Step 2
Make the dip by mixing all the ingredients in a bowl, then pour into serving bowls ready.
  Step 3
When oils to temperature, place all the batter ingredients into a bowl & whisk together until their is no lumps, tip veg in with the batter & coat, then in batches carefully place coated veg in the hot oil & cook for 4 to 5 mins or until crispy & light golden, remove with a slotted spoon, keep cooked ones in a warm oven while the rest are cooking.
  Step 4
Place cooked vegetables on a warm serving bowl with dip.

Suggestion & Tips

Most firm veg is best (not tomatoes for example), mushrooms in the mix are Very tasty.
