Ingredients & Prep

Smoked Salmon
Filling

Cream cheese
1 Garlic clove finely grated
1 tbsp
Fresh dill finely chopped
1 pinch

Blinis
175 g
Plain flour
200 ml
Whole Milk lukewarm
1 Egg
1 Egg white only whisked to firm peaks
1 tsp
Dried yeast
1 tsp
Caster sugar
1 pinch
Salt
Garnish
sprinkle
Fresh dill fronds
Method
Step 1
First make the blinis by adding flour, yeast, milk, egg & sugar into a bowl & whisking mixture together, then cover with cling film, prick a small hole in the film & leave in a warm place to ferment for 2 hours until it forms bubbles.
Step 2
Then whisk the egg white in a clean bowl , then fold into the blinis batter with salt.
Step 3
Heat a non stick frying pan on a low to med heat with a wipe of butter & dollop 2 tbsp of the batter in batches, cook until light brown then flip over & cook the other side to the same light brown, stack blinis in a piece of kitchen towel, when done set aside.
Step 4
Make the filling by mixing all the ingredients is a bowl & set aside.
Step 5
Before serving spoon a tbsp of the filling on each blinis then place a piece of smoked salmon over the top & garnish.
Suggestion & Tips
You can use any fresh herbs of choice like chives or lemon thyme.
