Ingredients & Prep

   60 g  Mayonnaise
   3 Eggs hard boiled & cool
   3 Toasted bread slices soda or brown
   2 Bacon rashers cooked & chopped
   1 tsp  Mustard Dijon
   4 drops  Tabasco or other chilli sauce drops
  Garnish
   sprinkle  Fresh dill, parsley, chives or tarragon

Method

  Step 1
Toast bread to light brown & cut with a pastry cutter into 5 cm rounds.
  Step 2
Mix well mayo, mustard & chilli sauce in a bowl.
  Step 3
Slice boiled egg/s with either an egg slicer or with a sharp knife into 4/5mm thick slices crossways, use slices with a good amount of yolk in the centre.
  Step 4
Stick egg slices with a small dollop of mayo mix on to each bread round, place another small dollop on top, stick a couple of bacon pieces & garnish.

Suggestion & Tips

Smokey bacon & soda bread is best, Can use duck eggs.
