Ingredients & Prep
8 Large Free Range Eggs
100 g
Mayonnaise
1 tbsp
Dijon Mustard
2 tsp
Smoked Paprika
1/2 tsp
white Ground Pepper
1/2 tsp
salt
Garnish
sprinkle
Fresh chives finely chopped
Method
Step 1
Boil Eggs to hard boil 15 mins, let go cold.
Step 2
Peel & cut eggs in half lengthways & carefully scoop out yokes into a bowl, add all other ingredients less Chives, mix well with a fork until smooth.
Step 3
Either scoop or pipe with star nozzle back into egg white shells, place on a serving plate, sprinkle over chives
Suggestion & Tips
Duck eggs work well.
