Ingredients & Prep

   500 g  Chicken of choice cut into 32 small pieces
   150 g  Boursin Cheese
   16 Peppadew Mild Piquant Peppers
   32 Spinach leaves washed
   1 tsp  Dried oregano
   1 Garlic clove finely grated
   2 tsp  Lemon juice
   1/2 tsp  Freshly ground black pepper
   1/2 tsp  Salt
   2 tbsp  Olive oil for frying
   16 Mini skewers or cocktail stick


  Step 1
Place chicken, garlic, oregano, lemon juice, salt & pepper into a bowl, mix well & set aside for 30 mins.
  Step 2
Place chicken into a frying pan on a med heat & cook stirring often for 15 to 20 mins until cooked, set aside to cool.
  Step 3
Take each Peppadew & fill with Boursin using a tsp, then thread on a piece of Chicken on the skewer then fold a spinach leaf into thirds & skewer on then a stuffed Peppadew the another spinach leaf then another piece of Chicken, repeat until all done, place on a serving platter & serve.

You can buy Peppadew ready stuffed for the supermarkets.
