Ingredients & Prep
4 Vine tomatoes finely chopped
1 Banana shallot finely chopped
2 Garlic cloves finely grated
4 tbsp Extra-virgin olive oil
2 tbsp Fresh basil chopped fine
2 tbsp Balsamic vinegar
1 Red chilli large mild finely chopped
1 tsp Sea salt
1/2 tsp Freshly ground black pepper
1 Crusty baguette cut into angled slices
2 Garlic cloves
sprinkle Olive oil
Frist make the tomato topping by mixing all the ingredients in a bowl, then set aside to marinate.
Heat a griddle pan or griddle plate or under the grill (keep your eye on) drizzle/sprinkle olive oil on the bread the toast each side, di in batches & set aside when done.
When all the toasts are done rub one side of the toast with a garlic clove, then place on tomato mixture on each toast & serve.
Suggestion & Tips
I like a piece of Parma ham on or a slice of mozzarella cheese or both.
