Puff pastry packet

Anchovy fillets
20 g
Parmesan finely grated
1 Egg yolk, beaten
Method
Step 1
Cut pastry in half with ways forming rectangles, flour worktop & roll both pastry pieces to almost half of its original thickness (about 3 mm).
Step 2
Place on one pastry sheet anchovy fillets in rows & cover sheet equally, sprinkle cheese over the top, then place second pastry sheet over the top s&wiching the fillets & cheese.
Step 3
Cut & trim edges, cut pastry in long strips 2 cm wide to the opposite to how the fillets are laying.
Step 4
Once strips are cut slide off the worktop or board onto a baking sheet, brush with egg yolk wash, bake in a pre-heated oven at 160'c for 10 to 12 mins, allow to cool before removing from baking sheet.
Suggestion & Tips
You can swap anchovy for sun dried tomatoes or use both.
