Ingredients & Prep

   3 Ripe bananas
   75 g  Butter, melted
   100 g  Sugar
   185 g  Plain flour
   1 tsp  Bicarbonate of soda (baking soda)
   1/2 tsp  Salt
   1 Egg, beaten
   1 tsp  Vanilla extract
   100 g  Chocolate chips

Method

  Step 1
Preheat oven to 350 F / 180 C / 160 C fan
  Step 2
Mash the bananas with a fork.
  Step 3
Melt the butter and mix in well with the bananas.
  Step 4
Add all other ingredients except the chocolate chips: sugar, flour, bicarbonate of soda, salt, egg (already beaten) and vanilla extract. Stir together until well combined and smooth.
  Step 5
Add in the chocolate chips, leaving back a handful.
  Step 6
Pour the mixture into a greased loaf baking pan. Sprinkle the remaining chocolate chips on top.
  Step 7
Bake for 50 minutes to an hour. It’s ready once a toothpick comes out clean.

Leave to cool in the pan for 10 minutes before transferring to a rack.

Suggestion & Tips

It’s a matter of preference but I personally think milk chocolate chips work better in this recipe rather than chocolate with a high cocoa content.
