Ingredients & Prep

   230 g  Plain flour
   120 g  Margarine (dairy free)
   100 g  Golden caster sugar
   100 g  Peanut butter crunchy
   4 tbsp  Roasted peanuts
   1 tsp  vanilla paste or extract
   1/4 tsp  Salt


  Step 1
In a bowl beat the sugar & margarine in a food mixer or electric hand mixer until light & fluffy, then add & slowly mix in the peanut butter, vanilla, flour & salt to a smooth dough , place3 dough in the fridge for an hour to chill.
  Step 2
Pre-heat oven to 140°C fan.
  Step 3
Ready 2 baking sheets covered with greaseproof paper, take 2 further sheets of greaseproof paper on a worktop, place dough on the first then lay over the second then roll out flat with a rolling pin to 1 cm thick, peel off top sheet then using a 8cm pastry cutter cut out as many as you can then place cut cookies on the baking sheet, gather in trimmings & re do to finish dough.
  Step 4
Push in some peanut halves on top of the cookies, then bake for 12 to 15 minutes or until light brown around the edges, cool on a rack.

Suggestion & Tips

Nice slightly warm with a cup of tea or coffee.
