Ingredients & Prep
275 g
Self-raising flour
200 g
Golden caster sugar
170 ml
Water
100 ml
Vegetable oil
1 tsp
Baking powder
2 tsp
Lemon juice
1 Lemon zest
Drizzle Topping
100 g
Granulated sugar
1 Lemon zest & juice
Method
Step 1
Pre-heat oven to 180°C fan.
Step 2
Line with greaseproof paper either a loaf tin or a springform cake tin.
Step 3
In a bowl mix the flour, baking powder & caster sugar with a wooden spoon, then add oil, water, lemon juice & zest, mix in the a smooth batter, tip into tin & bake for 30 minutes or until a skewer comes out clean.
Step 4
While cake is still warm mix the granulated sugar with the lemon zest & juice, then prick to top of the cake with a skewer of fork half way through, then spoon over sugar mixture evenly over the top & allow cake to absorb liquid leave sugar grains on top.
Step 5
Allow cake to go cold, then remove from the tin & serve.
Suggestion & Tips
You could use icing instead of drizzle.
