Plain flour
250 g
Butter unsalted soft
5 Eggs med
2 Egg med yolks
120 ml
Milk at 40°C
60 g
Golden caster sugar
1 tbsp
Honey
7 g
Dry yeast
2 tsp
Vanilla extract (optional)
1 tsp

Method
Step 1
Make the starter by whisking warm milk with the honey & yeast then leaving it for 1 hour to go frothy.
Step 2
A food mixer with a dough hook is best for this, first add flour, starter, all the eggs, sugar, vanilla (if used)& salt, then mix for 5 minutes until all combines & smooth, then add 50g of the soft butter & mix for 5 minutes, then a further 50g of soft butter & mix for 5 minutes & so until all the butter has been used.
Step 3
Place mixing bowl in the fridge for 2 hours, remove & knock back dough, place back in the fridge for a further 2 hours & knock back, by this time the dough should be cold to stop yeast working so now you can leave in the fridge for at least another 12 hours or next day to mature.
Step 4
Pre-heat oven to 180C fan &grease with butter a non-stick 2lb bread tin.
Step 5
Take out of the fridge & mix again for 10 minutes, tip out onto a floured work top & cut into 8 pieces & roll into balls, place each ball into the tin next to each other, then cover with a warm damp tea towel & leave to double in size.
Step 6
When risen bake for 40 mins or until deep golden brown on top.
Suggestion & Tips
Not suitable for burger buns as its sweet.
