Ingredients & Prep

   6 salmon 200g pieces
  Marinade
   100 ml  soy sauce dark
   4 tbsp  honey runny
   4 garlic cloves grated
   2 tbsp  fresh ginger grated
   30 g  fresh coriander chopped
   1 tbsp  lemongrass paste
   1 tbsp  fish sauce
  Garnish
   2 red mild chillies de-seeded finely chopped
   4 spring onions sliced fine
   2 limes quartered

Method

  Step 1
Mix all the marinade ingredients in a bowl.
  Step 2
Either place salmon in a clean plastic bag or in a tray, add marinade & leave to marinade for 20 mins before cooking.
  Step 3
To cook, for best results use a fish barbecue basket or a mat, if you don't have either then you may need to cut fillet into 3 pieces & be careful when turning over on the barbecue, cook about 5 mins a side depending on the heat of the barbecue. Or under a hot grill.
  Step 4
Place cooked salmon on a serving platter & garnish.

Suggestion & Tips

Nice with an Asian salad.
