Ingredients & Prep

   4 Whole prepared sea bream
   4 Lemongrass stalks cut into 1/3s
   4 Red chillies¬†finely chopped
   4 Limes juiced & zest
   1 Banana shallot finely chopped
   4 Garlic cloves finely grated
   2 Lemongrass stalks finely chopped
   1 tbsp  Fresh ginger finely grated
   3 tbsp  Thai sweet chilli sauce
   3 tbsp  Thai fish sauce
   3 tbsp  Dark soy sauce


  Step 1
Place 3 cut lengths of lemongrass into the cavity of the fish.
  Step 2
Mix all the marinade ingredients in a bowl or dish add & coat the fish then set aside for 10 to 15 minutes.
  Step 3
Place fish on the barbeque for about 5 mins per side, best to use a fish grilling basket if poss., if not be careful when turning, use an egg flipper, check if cooked if meat comes off the bone easily.

Suggestion & Tips

Most white fish works well with the dish. Nice with an Asian salad.
