Ingredients & Prep

   2 Aubergines med cut in half
   2 tbsp  Harissa paste
   2 tbsp  Honey
   1 tsp  Lemon juice
   1 tbsp  Olive oil
   1/4 tsp  Freshly ground black pepper
   1/4 tsp  Salt
   sprinkle  Pomegranate seeds (optional)
   2 Spring onion thinly sliced
   sprinkle  Fresh coriander


  Step 1
Mix the harissa, honey, oil, lemon juice, salt & pepper ready in a bowl.
  Step 2
Cut slash cuts in the aubergine flesh with a sharp knife in a criss-cross pattern but not through the skin.
  Step 3
Using a pastry brush or spoon over harissa mixture over the cuts & work into the cuts.
  Step 4
Place on the barbeque skin side down for 8 to 10 minutes, then carefully turn over & cook cut side for 4 to 5 minutes to finish, place on a serving plate & garnish.

Suggestion & Tips

These will work under a hot grill.
