Ingredients & Prep
1 Aubergine med cut in 5mm slices
2 Courgette sliced on the angle 5mm
2 Sweet/bell pepper cut in half lengthways
2 Beef steak tomatoes cut 5mm slices
4 Banana shallots cut in half lengthways
Marinade
50 ml
Olive or rapeseed oil
1 Lemon juiced & zested
1 tbsp
Fresh thyme leaves
2 tsp
Fresh rosemary finely chopped
2 Garlic clove finely grated
1/2 tsp
Salt
1/2 tsp
Freshly ground black pepper
Method
Step 1
In a bowl add all the marinade ingredients & whisk together, add & coat veg, then set aside for 30 minutes to infuse.
Step 2
Place veg on the BBQ & cook to your taste, some veg like tomatoes will cook quicker then some of the others.
Suggestion & Tips
You can add mushrooms or other veg of choice.
