Ingredients & Prep
500 g
Mushrooms large button
2 Onion cut into 3cm chunks
2 Sweet/bell pepper cut into 3cm chunks
Marinade
120 g
Plain yoghurt
2 tbsp
Dried fenugreek leaves
1 tbsp
Lemon juice
2 Garlic clove finely grated
2 tsp
Smoked paprika
2 tsp
Fresh ginger finely grated
1 tsp
Chilli powder
1 tsp
Ground coriander
1/2 tsp
Garam Masala
1/2 tsp
Ground turmeric
1/2 tsp
Ground cumin
1 tbsp
Veg or mustard oil
1/2 Freshly ground black pepper
1/2 tsp
Salt
Method
Step 1
Add all the marinade ingredients into a good sized bowl & mix well, then add mushrooms & coat, leave to marinate for 1 hour.
Step 2
Next use either long metal skewers or pre-soaked wooden ones thread on a mushroom then a piece of onion & then a piece of sweet pepper alternately on the skewers & cook on the barbeque for 8 to 10 minutes turning every 2 mins.
Suggestion & Tips
Good with green chutney or cucumber raita.
