Ingredients & Prep
4 Chicken leg thigh joints
Marinade
1 tbsp
Smoked paprika
1 tsp
Garlic powder or granules
1 tsp
Soft brown sugar
1/2 tsp
Dried oregano
1/2 tsp
Dried thyme
1/2 tsp
Ground cumin
1/2 tsp
Ground coriander
1/2 tsp
Ground black pepper
1/4 tsp
Salt
Glaze
75 g
Butter unsalted melted
75 ml
Rice wine or cider vinegar
60 g
Maple syrup
2 tsp
Smoked paprika
1 tsp
Garlic powder or granules
1/2 tsp
Chilli powder (optional)
1/4 tsp

Method
Step 1
Place & mix all the rub ingredients in a good sized bowl, then add chicken joints & coat, cover with cling film then place in the fridge for at least 4 hours 24 is best.
Step 2
Pre-heat oven to 120°C fan.
Step 3
Place marinated chicken joints in a baking tray or dish, cover tightly with tin foil & bake for 1 hour.
Step 4
While the chicken in in the oven place all the glaze ingredients into a saucepan over a med heat, stir & simmer for 6 minutes, then set aside.
Step 5
When ready for the BBQ place chicken joints on the BBQ to finish & add some colour, take off & brush with the glaze place back on BBQ & cook for a minute per side, re-glaze & serve.
Suggestion & Tips
You can cook under the grill if you wish.
