Ingredients & Prep
600 g
Lamb mince
1 tbsp
Fresh thyme leaves
1 Onion finely chopped
2 Garlic clove finely grated
30 g
Fresh coriander
1 Lemon zest & juice
Spice Mix
2 tsp
Cumin seeds
2 tsp
Coriander seeds
1 ml
Sweet paprika
1/2 tsp
Ground cinnamon
1 tsp
Chilli powder
1 tsp
Salt
1/2 tsp
Freshly ground black pepper
Yoghurt Sauce
200 g
Plain or Greek yoghurt
1 Garlic clove finely grated
1 tbsp
lemon juice
1 tbsp
Runny honey
2 tbsp
Extra virgin olive oil
1/2 tsp
Ground cumin
1/4 tsp
Salt
1/4 tsp
Freshly ground black pepper
Method
Step 1
Place cumin & coriander seeds into a dry frying pan on a med heat & toast tossing the pan until a little smoke comes off, then tip into a bowl to cool, then either put into a pestle & mortar or into a spice grinder & grind to a powder.
Step 2
Make the yoghurt by mixing all the sauce ingredients in a serving bowl, then set aside in the fridge.
Step 3
Next place mince with onion, garlic, thyme, lemon juice & zest, chopped coriander, salt & pepper with all the spice mix ingredients, mix all together well using you hands until well mixed.
Step 4
Well soak med wooden skewers or use metal one, next form meat on to the skewer using you hand to a sausage shape about 3 to 4cm in diameter, then cook on the barbeque for about 8 minutes turning a 1/4 every 2 mins, eat with the yoghurt sauce.
