Ingredients & Prep

   800 g  Raw scallops
   300 g  Pancetta or bacon rashers
   4 tbsp  Olive oil
   2 Garlic clove finely grated
   1 tbsp  Lemon juice
   10 g  Fresh parsley chopped
   1/4 tsp  Freshly ground black pepper


  Step 1
Add all the marinade ingredients into a good sized bowl & mix well, then add scallops & coat, leave to marinate for 30 mins.
  Step 2
Cut rashers into about 6 cm long pieces, then wrap around the marinated scallops, then push onto the skewer through the pancetta to hold.
  Step 3
Cook on the barbeque for 3 to 4 mins per side until pancetta is crispy & the scallops are cooked.

Suggestion & Tips

You can cook these under the grill.
